Ingredients: • 1 ½ cups (190 g) all-purpose flour • 1 tsp baking powder • ½ tsp baking soda • ¼ tsp salt • ¾ cup (150 g) sugar • ½ cup (120 ml) vegetable oil or melted butter • 2 large eggs • ¾ cup (180 ml) coconut milk (or regular milk) • 1 tsp vanilla extract • ½ tsp coconut extract (optional for stronger flavor) • ¾ cup (60 g) desiccated coconut

heat oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
3. In another large bowl, whisk sugar, oil, eggs, coconut milk, vanilla, and coconut extract until smooth.
4. Gradually fold the dry ingredients into the wet mixture until just combined (don’t overmix).
5. Stir in the desiccated coconut.
6. Pour the batter into the prepared loaf pan and smooth the top.
7. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
8. Let the cake cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
Optional: Sprinkle extra toasted coconut on top or drizzle with a light coconut glaze for a tropical touch!
